Custom templates and Office 2003 integration

Does anyone know what the best scenario is for creating a customized document workspace and meeting workspace template? Is there anyway to have more than one template? Customize existing ones? It seems like a waste if you have a custom team site, but then you can't customize your document/meeting workspaces.

I might not have been clear - I'm talking about creating a document workspace from Word 2003.

Why do you think that you can't?

Workspace is a marketing term for Site.
