Create Workflow - Similar to SP Collect Feedback

I'm trying to create a workflow that is very similar to the
out-of-the-box SP Collect Feedback workflow. I tried to just start
from scratch - but wasn't to pleased with results. For one, I couldn't
find a way to reproduce the 'Reviewers' input so it was a directory
lookup. Secondly, just the look of the email that sends and also it
being incorporated as a task in outlook so you can just edit it
through outlook.

So really my main question is - can I just grab an exact copy of a SP
workflow and then customize it? I believe the files are in
\12\TEMPLATE\LAYOUTS but am not sure of all the files that I'd need to
copy into my site collection.. Or is there a whole other method of
doing this?

I haven't figured out a way to copy  and edit  code of the existing
workflows deployed in Sharepoint, but the MOSS 2007 SDK has a sample
Visual Studio workflow  that is very similar  to the Approval/Reviewer
OOTB one. That one  is probably very similar to the Collect Feedback one
(maybe even in the same project).

By default the SDK would have it here, C:\Program Files\2007 Office
System Developer Resources\Samples\Workflow\ApprovalWorkflowSample

You can get copies to the InfoPath forms used in the features folder and
put them into that project, C:\Program Files\Common Files\Microsoft
Shared\web server extensions\12\TEMPLATE\FEATURES\ReviewWorkflows\Forms

You should change each form's name, and ID in File > Properties and
reference the id in the project's workflow xml. Otherwise it will try
to use the existing forms the deployed workflow is using. That may be
ok if you don't need to change the infopath form at all.

You can deploy the workflow as a feature with the scripts provided in
the project. Edit the PostBuildActions.bat file for this.
