Content management / Publishing

I am quite new to SharePoint so forgive me if this is a stupid question. I have
inherited an intranet site that has a combination of sites created with and
without publishing on the template. As this is a live site it would be
preferable to have publishing on all the sites/sub sites to allow changes to be
checked prior to releasing to everyone. Is there any way to add check out/ check
in / publish to existing sites when they were not created as publishing
templates?

For these sites, go to your administration screen and enabled the SharePoint
publishing features. Once you do that you'll have all of the functionality
that a publishing  site template  provides.
