How can I check if the version of SharePoint installed on a server is
production or evaluation?

Microsoft's official answer is at

Go to Add/Remove Programs, select sharepoint  and click Support

It looks from what I've read everywhere that:

Sharepoint 2001 Eval = 10.145.3914 <--
Sharepoint 2001 = 10.145.3914 <--
Sharepoint 2001 SP1 = 10.145.4629
Sharepoint 2001 SP2 = 10.145.6011

I don't know the difference in version  between eval and
non-service-packed' Sharepoint RTM other than the InstallType registry
setting as shown in the Microsoft link above.

This also might be of some help to you.
