Change date format of SPS2003 Sites/Libraries etc

Is there a way of changing the date format in SPS2003
from "MM/DD/YYYY" to "DD/MM/YYYY"?

My servers regional settings are all UK and the InfoPath form used to
populate my form library uses DD/MM/YYYY too, yet this is switched
when the form is submitted to SPS2003.

Anyone got any suggestions how this can be switched back?

Portal Server's regional settings  are, annoyingly, not inherited from the server's regional settings :-(.

You can set them from Site Settings > Manage Security and Additional Settings > Modify regional settings.

For WSS sites, this becomes Site Settings > Site Administration > Change regional settings.
