Cannot change Configuration database server

I was hoping to pick someone's brain about an odd SharePoint behavior.

We have migrated all of our SharePoint databases (test environment) from SQL
2005 to another server running SQL 2008. It appears that everything has worked

However…. On the Operations tab, under Servers in Farm, it still lists the old
server as the Configuration Database Server (at the top of the page)

I don't see how this is possible as we have in fact detached ALL SharePoint
databases from the old database server.

We tried clicking Remove Server next to the old SQL server, but this did not do
the trick. Where is this reference stored and how do we change it. If we try
creating new web applications it wants to create the database on the old server.

It's not really possible/supported to change the DB server. Generally
the workaround is to setup a SQL alias under the old name which points
to the new name.
