Backup restore procedure

I'm still a newbie to SharePoint and don't get to work with SharePoint
everyday. I need to backup my test sharepoint databases (1 server for
sharepoint and 1 server for sharepoint) and restore to a production
environment (1 server for sharepoint and 1 server for sharepoint).

Is there a procedure written out? At this point I have a backup of the
test databases and have installed SharePoint to the point of specifying
configuration on the new SharePoint server.

Now what?
