Backing up SharePoint and Restoring to a different one.

I was looking for a little help from the group. I have a SharePoint
2007 portal site and I can create a backup with the GUI built in the
site, but need to test if the backup are really working I want to
restore the data to a new site. What I am looking to do... I am
running the helpdesk templet and I want to be able to backup the site
with the sites helpdesk tickets/request and say the machine crashed I
would want to restore to a new server and beable to see the last
backups ticket requested. Help and step by step doc would be great.
