Backing up and restoring sites and subsite

What is the best way to be able to restore and backup subsites incase
of accidental deletion? or those times when things "magically" go
missing.

I am running MOSS 2007 and SQL2005.

Go to http://www.codeplex.com/governance and get the site delete capture
tool. It backups up webs and sites  as they are deleted.
