What accounts are needed to setup and admin. MOSS07?

I'm a bit confused as to which accounts I really need to create to
install and administer sharepoint. If someone could help me out with a
list of some sort and a description of what each does that would be
great.

No, I don't believe so. Most of the permissions are automatically set during
install, but the accounts  themselves will need to be created. Throughout the
configuration, you'll be required to specify the appropriate account usernames
and passwords. If you're using Kerberos vs NTLM, there's some additional manual
setup required.
