Use spsbackup to backup  everything from the databases, and then copy all
files from C:\Program Files\Common Files\Microsoft Shared\web server
extensions\60\TEMPLATE - or at least those templates that have been
modified. Remember to run iisreset on the new server after restoring and
copying the files. Also, if you have web parts somewhere else, remember
to copy those as well (and add them to GAC).
